Sabudana Vada
SABUDHANA VADA
Preparation time : 15 min + soaking

Serves : 3-4
Ingredients
Tapioca/Sabudhana 1 cup
Potato (boiled) 2 large
Ginger (finely chopped) 1 ½ inch
Curry leaves (finely chopped) 1 sprig
Green chillies (finely chopped) 3 no’s
Coriander leaves 2 Tbsp
Roasted Peanuts ¼ cup
Cumin seeds 1 tsp
Lemon juice ½ lemon
Baking powder pinch
Oil to fry
For Chutney
Mint leaves 2 Tbsp
Coriander leaves ¼ cup
Green chillies 2 no
Vinegar (instead of water) as required
Method
Wash tapioca/sabudhana to remove powder and soak it in water for 4-6 hours.
In a mixing bowl add soaked tapioca/sabudhana, grate the potatoes to the same bowl, finely chopped ginger, green chillies, coriander leaves, curry leaves. In a grinder/pestal or mortar crush the peanuts and add it to the bowl, salt to taste and baking powder, mix everything to form a dough.
Note: do not add water and if the dough becomes too sticky use peanut powder.
Now keep oil for heat in a kadai and on the other side make small flat balls from the dough and make a hole in the centre of it. Fry them in medium hot oil until golden brown both sides (do not disturb until golden brown as it tends to break) remove on absorbent paper to remove excess oil.
To make the chutney add mint leaves, coriander leaves, green chillies and vinegar to a grinder jar and grind to a smooth paste.
