Poha Breakfast Recipe

INGREDIENTS
Avalakki/Poha (thick variety)  200 gram's
Groundnut oil                            2 Tbsp
Mustard seeds                         ½ tsp
Green chillies (chopped)         3 no's
Curry leaves                              1 sprig
Groundnut                                 2 Tbsp
Potato (optional)                      1 medium
Onion (finely chopped)            2 medium
Salt                                            To taste
Turmeric powder                     ½ tsp
Lemon juice                             ½ lemon
Sugar                                        ½ tsp
Coriander leaves                     Garnish
Water (for cooking)                25ml

Method
Wash the Poha in a colander to remove the white powder (Poha should be washed but not soaked) if cooking in MadhyaPradesh style add salt, sugar and turmeric and keep it aside.
In a pan or kadai add oil and heat in low flame. When the oil is hot add mustard seeds and let it splutter add chopped green chillies, curry leaves and groundnut saute for 30 seconds and add potatoes (which are chopped into small cubes), onions and saute till onions are translucent. Now add salt and turmeric powder and mix it well. Add small amount of water just to bring everything together. Now add the washed Poha mix it well without using spatula and cook till Poha is heated though, sprinkle some water if required. Add lemon juice and sugar (if onions are not used sufficiently) and mix it using a spatula once. Garnish with coriander leaves and turn off the heat.
Note: Potatoes should be chopped in such a way that it should cook within the onions are translucent. Never soak the Poha or it will become mushy. After cooking transfer to a separate bowl and never keep it in the same pot in which it was cooked.
