Vegetable Rice Cutlet

          VEGETABLE RICE Cutlet/TIKKI

Serves: 10-12 pieces     Course: Starter
INGREDIENTS
Oil                                            3 Tbsp
Green chillies (chopped)      1 no
Onion (finely chopped)         1 medium
Carrot (grated)                       1 small
Beans  (chopped)                  3-4 no's
Boiled Potatoes (mashed)    1 medium
Salt                                          To taste
Rice (cooked)                          1 cup
Semolina/Sooji rava               1 Tbsp
Red chilli powder                    1 tsp
Pepper powder                        ¼ tsp
Chat Masala                            ¼ tsp

METHOD
In a pan/kadai add 1 Tbsp oil and heat in low flame, when the oil is hot add chopped green chillies and fry for 10 seconds, now add chopped onions and saute till translucent, add chopped beans, grated carrot, mashed potatoes, salt and saute for 2-3 minutes and turn off the heat.
In a mixing bowl add cooked rice, ready Masala, semolina, red chilli powder, pepper powder, chat Masala, salt if required and combine everything (mash while mixing). Wet your palm once and start making tikkis and keep it aside on a plate till all done. Now heat a pan/tawa in medium heat sprinkle around 2 Tbsp of oil, when the oil is hot place the tikkis and fry for 3 minutes each side until golden brown, serve hot with tomato ketchup or desired chutney.
