Halkova/Palkova

        HALKOVA/PALKOVA/MAIDA Burfi

INGREDIENTS
All-purpose flour/Maida       1 cup
Powdered sugar                    1 cup
Ghee                                       ½ cup
Cardamom (for flavor)         1 no
Almonds (optional)              for garnish

Method
In a thick bottom kadai add ghee and heat in low flame, when the ghee is melted add maida and start to combine it by stirring it for about 8-10 minutes till a nice aromatic smell comes or the mixture turns light brown in color. Switch of the heat and let it cool until it is warm (not too hot or not too cold) now add the powdered cardamom and powdered sugar (do not add all the sugar at once) gradually and start mixing. As the sugar is added the mixture turns hard and becomes harder to mix. (Taste for the required sweetness) 
Place a butter paper in a tray and transfer the mixture to it. Spread the mixture evenly using a spatula or spoon and garnish with almonds if required. Keep it aside to set. It will take 2 hours normally in room temperature and 20-30 minutes in refrigerator. 
When the mixture is set remove to a chopping board and cut into desired sizes.
