Mutton Liver Garlic Pepper Fry
MUTTON LIVER GARLIC PEPPER FRY

INGREDIENTS
Oil 2 Tbsp
Mutton Liver 300 Gram's
Turmeric powder ¼ tsp
Black Pepper corn's 1 tsp
Dry Red Chillies (spicy variety) 4 no's
Garlic cloves 7-9 no's
Salt to taste
Method
In a heavy bottom kadai add 2 Tbsp oil and heat in low flame, when the oil is hot add the liver cubes and fry for 2-3 minutes till the outer layer changes its colour completely. Now add turmeric powder and little salt and fry till the raw smell goes, meanwhile in a blender add black pepper corn's and dry red chillies and course well, now add in the garlic cloves to the blender and a splash of water and blend to a rough paste and keep it aside. When the raw smell of liver is completely gone add in the paste and a splash of water, adjust the salt and saute once, cover the lid and let it cook for 5-10 minutes. Remove the lid and fry till all the moisture is dried, garnish with chopped coriander and turn off the flame.
Note: after it's done close the lid and rest for minimum 5 minutes.
